Italian Sausage Sandwiches 4 crusty long rolls 4 Italian sausages 2 red peppers 2 green peppers 2 medium onions Roasted garlic cloves Olive oil Slice the sausages in half. In a frying pan with a bit of olive oil fry the sausages on both sides til done. Set aside and keep warm. Slice the peppers into long strips ½ inch thick. Thinly slice the onions. Saute together in sausage pan with a few tablespoons of olive oil til they are soft and begin to turn golden brown. Make garlic butter by mashing together about 2 cloves of roasted garlic with 4 tablespoons olive oil. Slice the buns and grill lightly, brush them with the garlic butter and place in each bun 2 sliced sausages and a good amount of the pepper-onion mixture. Serve hot.
